Yummy Healthy Eating…It’s Possible!

Why is it that the things that taste the best always seem to be the worst for you? Let’s change that thought pattern, and let me show you that yummy, healthy eating…it’s possible!

 

In order to discover this for yourself, you’ll have to do a little mind shifting.  I know I did!

 

Of course we need to eat our veggies…but they can be tasty! Here’s how!

 

One of the new great inventions of late is an air fryer.  Yep, you heard me! Whether it’s broccoli or asparagus, or a piece of cauliflower pizza, this tool can make your veggies taste amazing. Just google a great air fryer recipe for broccoli and you’ll find many.  I love to make mine with just a touch of olive oil, garlic and parmesan cheese.  Parmesan is really low in fat and high in flavor and a little goes a long way.  This is great on a variety of veggies like broccoli, asparagus and brussels sprouts.

 

Let your imagination run wild!

Here’s a couple of my favorite recipes you might want to try!  They are healthy and yummy too!  See what you think!

If you don’t have access to an air fryer, don’t worry.  Oven roasted veggies still work and are delicious.  And the combinations are endless!  Try some thin sliced onions with zucchini, garlic salt and parmesan sprinkled lightly over the top.  Or you can add a little starch by doing thinly sliced sweet potatoes or thinly sliced yams mixed with the zucchini.  If you want less salt, try some fresh garlic or garlic powder.  As you start to do this, you’ll start to get ideas of your own.

 

Cauliflower Rice…Who Knew?

 

My favorite veggie that is so flavorful, satisfying and versatile is cauliflower rice.  I buy it frozen already prepared, or you can buy your own and grate it.  Up to you….I just go for easy and effective.  I eat this in place of rice in every dish I used to eat rice in.  And you know what?  I don’t miss it!  Plus I cut way down on carbs, up my veggie intake and get added protein because cauliflower and broccoli both have plant based protein.  This is yummy healthy eating at its finest. Win, win, right?

Oh yeah, and take your vitamins! Duh!

 

If you are like me you probably HATE to take pills.  But here’s the deal…even if you are eating super clean and organic, it’s really hard to get all the nutrients you need from your food.  Our food simply doesn’t have the nutritional punch it did 20 years ago thanks to GMO’s and other growing practices.
